Lena from „Mein leckeres Leben“ has conjured up a wonderful recipe for a colourful world!

How to make the tartlets:
Ingredients
For the dough (about 8 pieces)
4 eggs
60 g raw cane sugar
3 tbsp water
1 pinch of salt
60 g pistachios, freshly ground
120 g light spelt flour
1/2 tsp cream of tartar baking powder
for the cream
350 ml milk
1 packet vanilla pudding powder
1/4 teaspoon ground bourbon vanilla
50 g raw cane sugar
250 g whipping cream
for the topping
A few strawberries and blueberries
1-2 kiwis
1 ripe mango

Preparation
Preheat the oven to 180°C fan oven, line a baking tray with baking paper.
For the pistachio sponge, beat the eggs with sugar and vanilla in a food processor for 5 minutes until creamy, add water and continue beating for 1-2 minutes.
Mix the spelt flour with the pistachios, salt and baking powder and gently fold into the beaten egg mixture with a whisk.
Spread the mixture on the baking tray and bake in the oven for 15 minutes. Remove and leave to cool completely. Cut out circles from the sponge, about 16 pieces.
For the cream, first cook a thick vanilla pudding. To do this, bring 300 ml milk to the boil with sugar and vanilla. Stir 50 ml cold milk into the pudding powder until smooth. Transfer the pudding to a bowl and leave to cool completely.
Whip the cream until stiff. Finally, stir the completely cooled pudding into the whipped cream with a mixer
Fill a piping bag with the cream.
Fill two sponge circles with the cream and decorate the tartlets on top with dollops of cream.
Cut the fruit into bite-sized pieces and garnish the tartlets with them. Keep cool until serving.
