How to make spoon eggs:
Ingredients
4 eggs
400 g chocolate coating
100 g cream cheese
150 g curd cheese
a little sugar
some lemon or lime juice
some apricot or mango jam
Preparation
Shell the top third of the eggs and empty them.
Wash out the empty eggs and dry well on both sides.
Melt the chocolate coating in a bain-marie and leave to cool slightly.
Pour some of the couverture into an egg. Turn the egg so that the couverture is spread all over.
Place the egg in the fridge and leave to dry.
Repeat the process until a chocolate layer of 3-5 mm has formed.
Allow the chocolate coating to harden completely.
Carefully peel the egg like a normal egg until only the chocolate egg remains.
For the cream, mix the curd cheese with the cream cheese, sugar and lemon juice and season to taste.
Place the chocolate eggs in egg cups or glasses.
Fill the eggs with the cream, preferably using a piping bag.
Finally, put a dollop of jam in the centre.
