Ingredients (for 10 pieces)
450 g spelt flour
2 tsp cream of tartar baking powder
1 pinch of salt
½ tsp cinnamon, ground
½ tsp vanilla, ground
½ organic lemon, zest
80 g raw cane sugar
250 g curd cheese
50 ml milk
50 ml oil
1 egg + 1 tbsp milk for coating
½ tsp cocoa, unsweetened
Preparation
For the dough, knead all the ingredients into a smooth and supple dough.
Roll out the dough on a lightly floured work surface to a thickness of approx. 3 cm and cut out 10 circles with a diameter of approx. 8-9 cm (keep re-rolling the dough). Cut out 10 more smaller circles with a diameter of 3-4 cm. Then cut out 5 more circles with a diameter of 3-4 cm and cut them into quarters (for the ears). Keep a small amount of dough and knead or colour with cocoa powder. Shape 20 small balls for the eyes.
Place the large circles on a baking tray lined with baking paper. Brush with beaten egg + milk. Place the smaller circles on the bottom half in the centre and press down lightly. Place the ears on top and the eyes in the centre.
Brush everything well again with the egg and milk mixture.
Bake at 170°C for 25 minutes until golden brown. Best enjoyed slightly lukewarm. Top with your favourite jam if you like.
