And this is how the muffins turn out
Ingredients
For the batter
125g butter at room temperature
125g sugar
125g wheat flour
1 tsp baking powder
1/8 tsp baking soda
2 eggs
1 tsp speculaas spice
30ml milk
For the topping
200g cream
250g mascarpone
60g icing sugar
1 tsp speculoos crumbs/ pieces

Rosemary stalks
Icing sugar
Preparation
Preheat the oven to 180 degrees top/bottom heat.
Line the muffin tin with small paper cases.
Mix the flour with the baking powder and mix well with the bicarbonate of soda and speculaas spice in a bowl.
Mix all the ingredients - except for the milk - to form a smooth batter.
Now add the milk and mix well again.
Divide the batter between approx. 10-12 paper cases and bake in the oven for approx. 17-19 minutes.
For the topping, mix all the ingredients in a mixing bowl until smooth and pipe onto the cooled muffins.
Then sprinkle with biscuit pieces or crumbs.
You can also cut small Christmas trees out of rosemary and sprinkle with icing sugar.
