It's time for biscuits! Lena from "Mein leckeres Leben" has created the perfect "feel-good cookies".
And this is how the biscuits turn out
Ingredients (for about 60 biscuits)
250 g soft butter
150 g brown raw cane sugar
2 organic eggs
1 organic orange, zest
200 g spelt flour
50 g fine rolled oats
50 g walnuts or hazelnuts, roughly chopped
1 tsp cream of tartar baking powder
1 pinch of salt
200 g dark chocolate
Preparation
Mix the softened butter with the sugar until creamy.
Gradually mix in the eggs.
Grate the zest from the organic orange or cut into very fine pieces. Add the orange zest to the butter mixture.
Mix the flour with the rolled oats, coarsely chopped nuts, baking powder and salt. Add the mixture to the cookie dough and stir in.
Chop the chocolate and mix in last.
Chill the cookie dough for at least 30 minutes or preferably freeze it.
Preheat the oven to 180°C hot air. Using a teaspoon, remove portions of the cookie dough, shape into balls and place on a baking tray lined with baking paper (leaving space in between).
Bake in a hot oven for approx. 10 minutes until golden brown. Leave to cool.
Enjoy with a hot chocolate, tea or coffee.
