How to make the dumplings
Ingredients
500 g dumpling bread
1 onion
various spring vegetables (carrots, spring onions, leek, etc.)
2 handfuls of chopped wild garlic
2 tbsp wild garlic pesto
500 g mountain cheese
6 eggs
250 ml water
1 tbsp oil
salt & pepper
herbs as required
250 g flour
Preparation
Cut the cheese into small cubes.
Then chop the onion into small cubes and fry.
Mix the onion with the dumpling bread, cheese and finely chopped wild garlic.
Season everything well with salt and pepper.
Mix the eggs with the water, add to the mixture and stir thoroughly.
Leave to stand for 10 minutes.
Now mix in the flour.
Shape the mixture into small, flat dumplings and fry in oil until lightly browned.
For the spring vegetables, cut the vegetables into the desired size and fry lightly. If necessary, cook the vegetables, such as the carrots, beforehand.
Serve with wild garlic pesto and spring vegetables.
