How to make the flame grissini
Ingredients
400 g light-coloured spelt flour or wheat flour
1 tsp salt
1 tsp raw cane sugar
150 ml lukewarm water
25 g yeast, fresh
1 egg white
50 ml olive oil
2 sprigs of rosemary, finely chopped
For sprinkling:
Sesame seeds
Pumpkin seeds, ground
Salt from the mill
Preparation
Pour the lukewarm water into a large mixing bowl and dissolve the yeast in it. Mix in the salt, sugar, egg white, olive oil and chopped rosemary. Add the flour and work into a smooth dough. Cover the dough and leave to rise for about 45 minutes.
Preheat the oven to 180°C hot air. Line two baking trays with baking paper.
Turn the dough out onto a work surface, take small portions and shape them into thin and long (approx. 60 cm) strands with your hands. Shape the strands into flames directly on the baking paper. Brush the flame grissini with water and sprinkle with a little sesame, pumpkin seeds and coarse sea salt.
Bake the grissini for 10-12 minutes. Leave to cool.
