How to make the recipe
Ingredients
2 char fillets
175 g risotto rice
750 ml vegetable stock
1 onion
Parmesan cheese, finely grated
herbs, fresh or frozen
olive oil
fresh spices, salt
100 ml white wine
rosemary, lemon
Preparation
Chop the onion and fry until translucent.
Add the risotto rice and sauté for 1-2 minutes. Don't forget to stir!
Deglaze with the white wine and reduce until there is almost no liquid left.
Keep pouring in the vegetable stock and simmer until the rice is cooked through and the liquid is almost gone. Stir again and again.
Then puree the herbs with the olive oil and mix into the risotto.
Finally, stir in the finely grated Parmesan.
Flavour with salt and pepper.
Season the char with salt and fish seasoning and sear on the skin side.
Serve the char fillet on risotto rice with a slice of lemon and rosemary.
